We grow Minnesota Greens in a special greenhouse. It’s cleaner, safer, and healthier than growing lettuce in fields like they do in California and Mexico.

We start with a special system that handles each seed individually and carefully plants it in a preformed plug (the plugs come in trays).
To assure perfect germination, we “incubate” the seeds in a temperature and humidity controlled room for 48 hours.

Once our seeds have germinated, we take them to an area where they can grow a little. It’s a very delicate stage. We pay special attention to make sure they get just-the-right mount of water for 5-7 days.
Next, we transfer the baby lettuce to special propagation tables out in the greenhouse. They’ll spend 2-3 weeks (depending on whether its summer or winter) getting bigger and stronger.

When they’re just the right size, we transfer the plants from production tables to production gutters. A perfect mixture of nutrients and water flows through the gutters and feeds each plant.

Another 2-3 weeks, and our Minnesota Greens live lettuce is ready to harvest. No cutting the head off and shipping dead lettuce. We uproot each plant and rush it to the store live. You can’t get and fresher or crisper than that.
