Fresh, year-round, locally raised lettuce just got huge, thanks to Bushel Boy, the Owatonna, Minn., greenhouse grower that has introduced leaf lettuce sold with its root system intact, a texture- and flavor-retaining bonus that also adds several days of refrigerated shelf life.

Bushel Boy Brought Us Vine On Tomatoes, and Now Real Fresh Lettuce
In 1990, Jay Johnson started Bushel Boy farms in Owatonna, Minnesota – setting up acres of greenhouses to grow real vine-on tomatoes that could easily be brought to market to the Twin Cities and the region. Jay was using the “green” thinking ethic before it was even hip! Now – his newest venture comes from lessons learned in Europe, where the Dutch have been growing lettuce in a way that allows them to bring the entire plant, roots included, into stores – and in turn, into kitchens everywhere. The green leaves stay fresh for weeks, rather than days, and are filled with great taste and vitamins. Check out what Jay is up to right here – during this week of Earth Day, 2008 – having something this eco-friendly right out our back door is pretty cool.

Bushel Boy answers customer demand
Heavy snow blanketed the glass panels overhead, but the temperature inside Bushel Boy's greenhouse was a balmy 75 degrees.
Standing inside in the sea of green was owner Jay Johnson, who was surveying Bushel Boy's first harvest of lettuce,. row after row of perfect green plants.
Fresh-picked heads of Bushel Boy lettuce are now appearing in grocery stores. Until this year, Bushel Boy grew tomatoes exclusively.
